Apple and Cranberry Muffins

Makes 12 medium muffins

Ingredients
2 cups plain flour
1 tbs baking powder
2 tsp ground cinnamon
3/4 cup brown sugar (firmly packed)
2 medium Granny Smith or Red Delicious apples, cored, peeled, chopped
3/4 cup dried cranberries
125g butter, melted, cooled
2 eggs, lightly whisked
3/4 cup milk

Method
1. Preheat oven to 180°C. Grease 12 medium muffin pans or line with paper muffins cases.

2. Sift the plain flour, baking powder and cinnamon together into a large bowl. Stir in the brown sugar, apples and cranberries until well combined.

3. Whisk together the butter, eggs and milk until well combined.

4. Add the milk mixture to the flour mixture and stir with a large metal spoon until just combined.

5. Spoon the mixture evenly into the muffin pans. About half of the muffin pans.

6. Bake in preheated oven for 20 minutes or until golden and cooked through.

7. Remove from oven and stand for 2-3 minutes before turning onto a wire rack. Serve warm or at room temperature with a little butter or cream cheese.

These can be store in an airtight container for up to 1 to 2 days.
